Trade Center Management Associates (TCMA, A Drew Company), the exclusive manager of the Ronald Reagan Building and International Trade Center, is seeking an Assistant Executive Steward to join our Food and Beverage team.
The Assistant Executive Steward works with the Executive Steward to coordinate and oversee all stewarding operations, providing support for the Culinary and Events Departments. Ensures the cleanliness of all kitchen and pantry areas and other places used for dispatch and breakdown of food and maintains inventory of china, glass and silver, ensuring that all equipment is clean and in proper working order.
Essential Functions
Maintenance and care of all food and beverage equipment
Maintain a perpetual inventory of all food and beverage equipment and par levels
Ensure that equipment is stored properly and cleaned properly for use
Revise and maintain policies and procedures to minimize breakage and shrinkage, and reinforce with training
Ensure the cleanliness and organization of all kitchen areas, pantries, dispatch areas, loading dock and employee locker rooms
Ensure that all food and equipment is dispatched to the appropriate place to facilitate food and beverage service as specified on the banquet event orders
Schedule staff properly to provide necessary support for plate-ups, dispatch and breakdown stations, delivery of equipment for set-up, and proper breakdown and storage of equipment
Maintain three sets of up to date MSDA sheets for chemicals used in the Stewarding department and ensure that they are stored in the proper places
Train staff on all machinery, equipment and chemicals used
Ensure that the dish machines are performing up to standards and that equipment is cleaned properly
Report and/or remedy any unsanitary or unsafe conditions immediately
Establish and maintain ongoing training programs for each position in the Stewarding department
Administer employee counseling when appropriate consistent with TCMA’s policies and procedures, following the direction of the Executive Steward.
Job Requirements
Minimum of one year in a supervisory position in a high volume food and beverage operations
Ability to work flexible schedule to include days, nights, weekends and holidays
Experience with Microsoft word and excel (or equivalent)
Thorough knowledge and understanding of kitchen equipment use and operation
